Preparation time 10 mins

Cooking time 30 minutes 

Ingredients you will need 

  • 1 brown onion diced
  • 1 tablespoon garlic
  • 2 teaspoons crushed ginger
  • 2 tablespoons Fusion of Spice Moroccan spice
  • 1 kg pumpkin, peeled, diced 
  • 2 tablespoons  olive oil
  • 2 tins chickpeas washed and drained 
  • 1 litre of vegetable stock
  • 1 pinch of salt 

Method 

Step 1-  In a heavy based saucepan fry off onion garlic and ginger until onion is soft

Step 2-  Add your pumpkin fry off for 5 minutes when pumpkin is soft, fry off     Moroccan spice for a minute to release the flavours

Step 3 - Then top up with vegetable stock cook for 20mins 

Step 4 - Add chickpeas and salt cook for 10mins

step 5 - Cool down then blend using a blender until smooth check the seasoning and serve with you favourite Pitta or Turkish bread
