Smoky BBQ Chicken Thighs

Ingredients:

  • 6 bone-in, skin-on chicken thighs
  • 3 tablespoons Australian Smoky BBQ Rub
  • 1 tablespoon olive oil
  • 2 tablespoons honey (optional for a glaze)
  • Lemon wedges, for serving

Instructions:

  1. Preheat your oven to 200°C or set up your BBQ grill for medium-high heat.

  2. Prepare the chicken:

    • Pat the chicken thighs dry with a paper towel.
    • In a bowl, toss the chicken with olive oil to lightly coat.
    • Generously rub each chicken thigh with Australian Smoky BBQ Rub, making sure to cover all sides for maximum flavour.
  3. Cook the chicken:

    • Oven: Place the chicken thighs on a baking sheet lined with parchment paper or foil, skin-side up. Roast for 35-40 minutes, or until the internal temperature reaches 75°C , and the skin is crispy.
    • Grill: Place the thighs on the grill, skin-side down first, and cook for 6-7 minutes per side, flipping halfway until fully cooked.
  4. Optional honey glaze:

    • In the last 5 minutes of cooking, brush the chicken thighs with honey for a sweet and smoky glaze.
  5. Serve: Remove from heat and let the chicken rest for a few minutes. Serve with lemon wedges for an extra zesty touch.
