Ingredients: Paprika, Cumin, Sugar, Chilli powder, Salt, Black pepper, Cayenne pepper

Recommended Shelf life: Once opened, it is best to use it within 6 months for optimal freshness and quality. 

 

Simple Pork Ribs 

Ingredients:

  • 2 racks of pork ribs
  • 3-4 tablespoons Carolina Rub
  • 2 tablespoons olive oil
  • 1/2 cup apple cider vinegar (optional, for basting)
  • Roy Rogers BBQ sauce (optional, for finishing)

Instructions:

  1. Preheat your oven to 150°C, or preheat your smoker or BBQ grill to low heat.

  2. Prepare the ribs:

    • Pat the ribs dry with a paper towel.
    • Rub olive oil over the ribs to help the spice stick.
    • Generously coat both sides of the ribs with Carolina Rub, making sure to press it into the meat.
  3. Cook the ribs:

    • If using an oven, place the ribs on a baking tray lined with foil. Cover the ribs with foil to trap moisture.
    • If smoking or grilling, place the ribs over indirect heat, cover them, and maintain a low temperature.
  4. Cook low and slow:

    • Bake or smoke the ribs for 2.5 to 3 hours, or until the meat is tender and pulls easily from the bones.
    • For extra flavour, baste the ribs with a mixture of apple cider vinegar and water every hour.
  5. Optional BBQ finish:

    • In the last 10-15 minutes, brush the ribs with Roy Rogers BBQ sauce and return to the heat uncovered to caramelize.
  6. Serve: Let the ribs rest for a few minutes, then slice and enjoy!
