Recipe: Traditional Spanish Paella
- 6 tablespoons of olive oil
- 1 medium onion, finely diced
- 1 teaspoon of fresh crushed garlic
- 400g of rice
- 4 tablespoons of Fusion of Spice Paella Mix
- 125ml of dry white wine
- 1 liter of chicken or seafood stock
- 1 bay leaf
- 1 large red capsicum, diced
- 2 tablespoons of parsley
- 300g of barramundi fish, diced
- 250g of mussels
- 150g of calamari rings
- 6-8 prawns
- 5g of salt (to taste)
- A pinch of saffron
- Heat up the paella pan and add olive oil. Fry the onions and garlic until fragrant.
Add the rice to the pan and fry for a few minutes. Stir in the paella spice mix, saffron, and bay leaf. Pour in the white wine and stir until the rice comes loose from the bottom of the pan.
Add the stock and bring it to a boil. Reduce the heat and simmer. Add the fish, prawns, mussels, and red capsicum. Let it cook in the juices for approximately 10 minutes. Check the prawns for doneness. Finish off with the calamari rings and cook for an additional 4 minutes. Garnish with parsley and arrange the seafood in a decorative pattern.
Ensure that all the liquid is absorbed and taste the paella for saltiness. The edges of the rice should have a nice crunch. Add salt according to your taste. Reduce the heat and let the rice absorb the remaining liquid for 25 to 30 minutes.
